Cassava cake is a popular classic Filipino dish served as dessert or a heavy snack. It is prepared using a grated cassava as its main ingredient. Cassava is a woody shrub which is common and readily available in the Philippines.

Because of its popularity and being one of the most favorite dish by Filipinos, there are different ways and recipe on how to prepare such dish. Among the many this particular recipe is one of my favorite. It truly captures the true taste and sweetness of a cassava cake. Moreover, it is very easy to follow if it is your first time preparing such dish. Just simply gather the ingredients and follow the instructions. Enjoy baking and eating your cassava cake.

Ingredients:

Cassava Batter:

2 pounds grated cassava

1 can coconut milk

½ can milk (evaporated)

2 pieces raw eggs

¼ cup melted butter

6 tablespoon grated cheese

120 ml condensed milk

 3ml sugar

Topping:

1 can coconut milk

2 tablespoon sugar

½ cup condensed milk

2 tablespoon sugar

2 tablespoon grated cheese

1 piece raw egg

Cassava cake preparation:

  1. Gather all the needed materials and ingredients.
  2. Measure and prepare the ingredients as instructed above.
  3. Obtain a large mixing bowl. Mix the grated cassava, butter condensed milk, evaporated milk and sugar with your spatula. A wooden spatula is highly recommended. You may also use an electronic mixer if you have one.
  4. Mix the preparation until a smooth consistency will be achieved.
  5. Add then the eggs, grated cheese and coconut milk. Still mixing continuously as you add each ingredient.
  6. Once all the ingredients are fully mixed up, obtain a greased baking pan. Pour unto it the mixture you’ve made.
  7. Place then the baking pan inside the oven then bake for around 30 minutes setting the heat at 400 degrees. Wait for it to be fully cooked. Once it is already cooked, remove from the oven and set it aside.

Cassava cake topping preparation:

  1. Obtain a deep pan. Place it over the stove and heat up.
  2. Pour and combine the sugar and flour. Add then the condensed milk. Stir slowly nad continuously.
  3. Add the grated cheese and let it melt as it combines with the other ingredients. Continue on by adding the coconut milk. Stir continuously for around ten minutes.
  4. Once all the ingredients are mixed up, remove from the stove and slowly pour this mixture to the cassava cake you’ve set aside.

Final cooking of the cassava cake:

  1. Get your egg and separate the egg yolk from the egg white.
  2. With your egg white, glaze the topping with the use of basting brush.
  3. Replace the baking pan into the oven and bake again until it will turn golden brown. Remove it from the oven carefully. Make sure to use a pot holder so as not to burn your hands because the pan is very hot.
  4.  Garnish the top with grated cheese. Slice and place it on a serving platter.
